Healthy Stuffing Recipe: Omega-3 Super Stuffing

healthy-stuffingThe heart-healthy omega-3s in this stuffing recipe come from the flaxseed. Often, grocery stores carry this ingredient in their baking section.


2 1/4 cups chicken stock
1/4 cup brown rice
4 tablespoons Smart Balance (or another healthy spread)
2 cups fresh sliced mushrooms
2 cups diced celery
1 cup chopped onion
4 cups bread crumbs
1 tablespoon poultry seasoning
3 tablespoon milled flaxseeds

Combine the chicken stock and the brown rice in a medium-sized saucepan. Bring to a boil. Reduce heat and let simmer until rice is tender.

Melt the margarine in a large skillet. Add the mushrooms, celery, onion and flaxseeds. Cook until the vegetables are soft.

In a large bowl, mix the breadcrumbs and poultry seasoning. Add the rice and the vegetables, and mix well.
